Penne Salad with Sheep Cheese

Ingredients
- 1 vegetable onion
- 4 tbsp olive oil
- 400 g penne
- Salt
- 1 cucumber
- 1 yellow bell pepper
- 300 g feta
- 2 sprigs dill
- 1 lemon (juice)

Peel the onion and slice it into thin rings. Heat 1 tbsp of oil in a pan and sauté the onion rings for 2-3 minutes over low heat until translucent. Remove from heat and let cool.

Cook the penne in salted water until al dente, then drain, rinse with cold water, and set aside to dry. Wash the cucumber, halve it lengthwise, and slice into thin rounds or half-moons. Clean the bell pepper and cut into pieces. Dice the feta. Rinse the dill, shake dry, and trim the tips; reserve a few for garnish.

Combine the pasta with the onion rings, cucumber slices, bell pepper pieces, diced feta, and dill in a large bowl. Whisk the remaining olive oil with lemon juice, season with salt and pepper, then fold into the salad. Garnish the penne salad with the reserved dill sprigs and serve immediately.
