Ingredients

  • 500 g penne
  • 2 bundles arugula
  • 1 bell pepper
  • 300 g cherry tomatoes
  • 8 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • Salt
  • Pepper

Instructions

    Cook pasta according to package instructions, drain, rinse with cold water, and let cool.

    Wash arugula and slice into fine strips. Wash tomatoes and halve them. Halve the bell pepper, remove seeds, wash, and cut into fine strips.

    Combine all ingredients with the pasta. Whisk a dressing from the listed ingredients, drizzle over the salad, and chill for 1 hour.
