Ingredients

  • 40 g chopped walnuts
  • 8 tbsp olive oil
  • 1 tsp fresh rosemary
  • 40 g Parmesan
  • 2 Garlic cloves
  • 250 g spinach leaves
  • 1 onion
  • 4 dried tomatoes
  • Salt
  • ground pepper
  • 500 g penne

Instructions

    Briefly toast the walnuts in 1 Tbsp olive oil. Stir in the rosemary. Break the Parmesan into small pieces. Peel the garlic. Blend the walnuts, Parmesan, garlic and 6 Tbsp olive oil.

    Rinse and wash the spinach. Peel and dice the onion. Dice the tomatoes. Heat the remaining olive oil. Sauté the onion and tomatoes. Add the spinach and let it wilt. Season with salt and pepper.

    Cook the penne according to package instructions in plenty of salted water until al dente. Drain, let it stand briefly, then mix with the spinach. Serve with walnut pesto.
