Ingredients
- 400 g spaghetti
- 100 g fresh spinach leaves
- 1 bunch parsley
- 2 Garlic cloves
- 100 g walnut kernels
- 100 g grated Parmesan cheese
- 100 ml olive oil
- Salt
- 2 tbsp coarsely chopped walnuts (for garnish)

Cook the spaghetti in a pot of boiling salted water according to package instructions until al dente. Drain and set aside.

For the pesto, wash and dry the parsley, then strip the leaves from the stems. Peel and chop the garlic. In a blender, combine the parsley, garlic, walnuts, grated Parmesan, and 80 ml olive oil; blend until coarsely mixed. Season with salt to taste.

Wash and dry the spinach leaves, then sauté them in a pan with a little oil over medium heat until wilted. Add the cooked spaghetti to the pan, remove from heat, and toss everything together with the pesto. Sprinkle the remaining chopped walnuts on top before serving.
