Ingredients
- 250 g spelt flour Type 1050
- 1 tsp Baking powder
- 100 g softened butter
- 100 g coconut blossom sugar
- 0.5 tsp vanilla powder
- 4 eggs
- 100 g apple sauce
- 1 pinch salt
- 750 g tart apples
- 2 tbsp honey
- 80 g chopped pecans
- 70 g half pecan halves
Instructions

Mix flour with baking powder.

Whisk softened butter with coconut blossom sugar and vanilla powder until frothy, fold in eggs and then stir in the dry mixture. Mix in apple sauce and salt.

Peel, halve, and core the apples.

Fill a greased pan with batter. Score the convex side of each apple several times, place them on the batter, and sprinkle chopped pecans over the apples.

Drizzle liquid honey over the cake and arrange half pecan halves decoratively around the edge.

Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 50 minutes.

Remove, let cool slightly, then take out of the pan and set on a cooling rack.
