Fruitful Cheese Fondue with Cheddar and Spinach

Ingredients
- 200 g spinach leaves
- 1 Garlic clove
- 475 ml dry white wine
- 400 g cheddar cheese
- 400 g Gruyère cheese
- 0.25 tsp Chili flakes
- 15 g cornstarch
- 50 ml kirsch
- Salt
- a pinch nutmeg
- 8 tart green apples (e.g., Granny Smith)

Wash the spinach, spin dry and remove any thick stems. Finely chop the leaves. Lightly crush the garlic clove, halve it, and rub the fondue pot with it.

Heat the wine in the fondue pot; meanwhile, grate the cheeses, then add them to the wine and stir constantly over medium heat until a smooth cream forms.

Crush the chili flakes in a mortar. Whisk the cornstarch with a little kirsch until smooth, fold into the cheese mixture, let it thicken once, and season with salt, nutmeg, and the crushed chili flakes. Place the pot on a burner and set to low heat.

Wash the apples, quarter them, core them, and cut into strips. Stir the chopped spinach into the fondue, skewer the apple strips onto fondue forks, and dip them into the warm fondue.
