Ingredients
- 140 g almonds
- 175 g dark chocolate couverture
- 4 tbsp rum (54%)
- 1 tsp orange zest (unprocessed)
- 100 g Soft Butter
- 250 g powdered sugar
- 50 g dark chocolate
- 100 g milk chocolate

Finely chop the almonds in a food processor. Roughly chop the couverture and melt it over a double boiler. Stir in the rum, orange zest, and ground almonds into the liquid chocolate. Beat the butter with an electric mixer until fluffy. Sift powdered sugar over it and fold in. Gradually whisk small portions of the buttercream into the chocolate mixture. Then let it cool in ice water for several minutes.

Meanwhile, crush the two chocolates together for rolling and chop them into fine crumbs. Sprinkle on a plate.
