Ingredients

  • 250 g pearl millet
  • 1 clove garlic
  • 1 tbsp butter
  • 500 ml vegetable broth
  • Salt
  • Pepper (freshly ground)
  • 300 g young nettle leaves
  • 1 Shallot
  • 200 g sheep cheese
  • oil (for the dish pan)','50 g crème fraîche

Instructions

    Rinse the millet in a sieve under hot water and drain well. Peel and finely dice the garlic. Briefly sauté in hot butter, then add the millet. Pour in vegetable broth and simmer gently for about 10 minutes until most of the broth is absorbed and the millet is nearly cooked. Season with salt and pepper and remove from heat.

    Wash, trim, and blanch the nettles briefly in salted water. Shock, drain well, and roughly chop. Dice the shallot finely and mix it with crumbled sheep cheese into the nettles. Season with salt and pepper.

    Preheat the oven to 200°C (400°F) with both fan and top heat. Lightly oil a baking dish.

    Spread the millet in the dish, spread crème fraîche over it, then arrange the nettle mixture in the center. Bake for about 25 minutes until golden and bubbly.
