Pear with Cheese on Potato Patties

- 800 g potatoes
- Salt
- Pepper (freshly ground)
- nutmeg
- 1 tbsp potato starch
- 3 egg yolks
- 1 tbsp softened butter
- 4 tbsp heavy cream
- butter for frying
- 1 camembert cheese
- 2 pears
- paprika powder
- chives rolls
- 200 g heavy cream
- 3 tbsp lingonberry jam

Peel the potatoes and cook in salted water for about 25 minutes, then drain and let cool slightly before pressing them into a bowl. Stir in potato starch, egg yolks, butter, cream, salt, pepper, and nutmeg.

On a floured surface roll out the dough and cut into slices about 2 cm thick.

Fry the slices in hot butter for about 3-4 minutes on each side over medium heat until golden. Keep the finished patties warm in an oven at 70°C.

For serving, peel, halve, core, and thinly slice the pears. Slice the camembert into thin rounds. Whip the cream to stiff peaks and fold in the lingonberry jam.

Arrange the pear slices and cheese on top of the potato patties, sprinkle with paprika powder and chives. Serve with a side of lingonberry cream.
