Ingredients
- 250 g ricotta
- 2 Eggs
- 6 tbsp flour
- 1 tbsp powdered sugar
- 20 g soft butter
- 2 tsp grated lemon zest
- powdered sugar (for dusting)
- oil (for frying)
- 1 Mango
- 1 Kiwi
- 250 g mixed berries
- 2 tbsp Sour cream
- 4 small mint sprigs

Mash the ricotta with a fork, then beat in the eggs. Gradually add the flour by spoonfuls and mix slowly. Stir in the soft butter, lemon zest, and powdered sugar until well combined. Whisk vigorously until all ingredients are blended. Chill the mixture for 2 hours.

For the garnish, peel the mango, cut into 4 slices, and set aside. Puree the remaining mango, strain through a sieve, and keep aside. Puree the berries, lightly sweeten, and strain. Peel the kiwi and cut into 8 wedges. Whisk the sour cream until smooth.
