Pear Jam

Ingredients

  • 1.2 kg pears
  • 1 kg gelatin sugar
  • 1 stick cinnamon
  • 1 star anise
  • 3 lemons (including juice)

Instructions

    Peel, quarter, core, and finely chop the pears, then mix with lemon juice. Roughly puree everything with a hand blender. Weigh the pear purée and add an equal amount of gelatin sugar along with the spices. Cook while stirring until it boils, then simmer for another 4 minutes to test the gel (gelatin test).

    Remove the cinnamon stick and star anise and pour the hot jam into jars. Seal the jars immediately, place them on their lids, and let them cool for about 15 minutes before turning them upside down to finish cooling.
