Pear Helene Dessert in Glass by Spoonsparrow is a special dessert from French cuisine.
Ingredients
- 4 pears
- 0.5 lemon (juice)
- 500 ml dry white wine
- 150 g sugar
- 1 tsp freshly grated ginger
- 0.5 cinnamon stick
- 1 piece untreated lemon zest
- 150 g dark chocolate couverture
- 40 ml pear brandy
- 2 Tbsp whipping cream
- mint

Peel the pears and immediately drizzle with lemon juice. Reduce the wine (or water if preferred), sugar, ginger, cinnamon and lemon zest to a syrup. Poach the pears in the liquid for 5–8 minutes depending on ripeness, then let them cool.

Coarsely chop the chocolate and melt it with pear brandy and cream over low heat while stirring. Halve, core and cut the pears into wedges. Stir the chocolate sauce well and arrange the pears with the sauce in dessert glasses, garnishing with mint.
