Violet Berry Jam

The jam from Spoonsparrow is especially fruity and perfect for the roll at breakfast!

Ingredients

  • 1 kg violet berries (dogwood fruits)
  • 2 vanilla pods
  • 200 g apples
  • 2 tsp lemon juice
  • 300 g coconut blossom sugar
  • 1 tbsp agar-agar

Instructions

    Wash the violet berries and pluck them from their stems. Wash the apples, remove the core, and cut into small pieces. Cook the berries and apple pieces with 1 cup of water until very soft in about 15 minutes, then puree.

    Slice the vanilla pods lengthwise, scrape out the seeds, and mix with coconut blossom sugar, agar-agar, and lemon juice. Bring the fruit mixture and coconut blossom sugar to a boil, then simmer for 5 minutes while bubbling. Pour into prepared twist-off jars and seal immediately.
