Ingredients

  • 2 kg small firm salad cucumbers
  • 250 g salt
  • 50 g fresh horseradish
  • 1 handful mixed herbs (e.g., dill, bay leaf, parsley)
  • 1 tbsp mustard seeds

    Wash the cucumbers thoroughly under running water and let them drain. Rub each cucumber with plenty of salt (about 100 g per cucumber) and leave them to soak overnight in a covered bowl.

    Peel and dice the horseradish. Wash the herbs, shake dry, and pluck as needed.

    Pack the cucumbers with mustard seeds and herbs into sterilized jars. Distribute the remaining salt over the jars. Pour boiling water over them, ensuring the cucumbers are fully submerged. Seal the jars tightly.
