Rice Pudding with Fruit

Ingredients

  • 150 g rice
  • 375 ml milk
  • 1 packet vanilla sugar
  • 60 g sugar
  • 1 pinch salt
  • lemon zest
  • 2 tbsp honey
  • 2 Kiwis
  • 150 g raspberries
  • 2 peaches
  • fresh mint (for garnish)

Instructions

    Bring milk with vanilla sugar, sugar, salt and lemon zest to a boil. Stir in rice and cover; simmer gently for about 20-25 minutes on low heat, stirring minimally so the grains stay separate and absorb all liquid. Let cool uncovered.

    Wash berries, discard stems, pat dry.

    Peel kiwis, halve and slice.

    Wash peaches, halve, remove pits and dice.

    Fold fruit and honey into the cooled rice; sprinkle with mint before serving.
