Ingredients

  • 220 g flour
  • Salt
  • 1 egg
  • 140 g butter
  • 2 pears
  • 2 tbsp lemon juice
  • 3 eggs
  • 150 ml whipping cream
  • 50 g sour cream
  • 200 g Gorgonzola cheese
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • flour (for dusting the work surface)
  • butter (for greasing the baking sheet)

Instructions

    Mix flour with a pinch of salt, sift onto the work surface, create a well in the center, crack an egg into it and scatter butter pieces around the well. Quickly knead by hand into a smooth dough, shape into a ball and wrap in cling film; chill for 30 minutes.

    Preheat the oven to 180°C (350°F) with upper and lower heat.

    Peel the pears, quarter them, remove the core cavity and cut fan‑shaped slits. Immediately drizzle with lemon juice.

    Whisk the eggs with sour cream and whipping cream, season with salt, pepper and a pinch of nutmeg. Crumble the Gorgonzola into small cubes, mash with a fork and fold into the egg mixture.

    Roll out the dough on a floured surface to slightly larger than the baking sheet, line the greased sheet and lift a rim. Spread the egg‑cheese mixture evenly over the dough, arrange the pear slices fan‑shaped on top and bake in the preheated oven for about 40 minutes until golden brown. Remove, let cool slightly and serve cut into pieces.
