Quark with Herbs
Fresh quark mixed with lemon and herbs for a light snack. Try this and more recipes from Spoonsparrow!
Ingredients
- 500 g quark
- 0.5 lemon
- 2 egg whites
- 200 g heavy cream
- 1 pinch salt
- 6 pastry shells (ready-made)
- 1 handful herbs (to taste)
- 150 g flour
- 75 g butter
- 1 egg yolk
- 1 tbsp heavy cream
- 1 tsp salt
- Sea salt
- pepper (ground)
- dried chili flakes, crushed
Instructions

Whisk the quark with lemon juice until smooth; beat the egg whites with a pinch of salt until stiff. Fold the stiff mixture into the quark.

Place in a shallow bowl and freeze for at least 4–5 hours, stirring vigorously every 30 minutes during the first 3 hours (or use an ice cream maker).

Knead flour, butter, egg yolk, cream, and a teaspoon of salt into a smooth dough; roll out on a floured surface. Sprinkle the dough with salt, chili, and pepper, press lightly, and cut out shapes.

Arrange the shapes on parchment paper with space between them and bake in a preheated oven at 200 °C for about 12 minutes; let cool on the tray.

Cut ice spheres from the frozen mixture and place them into the pastry shells along with herbs. Insert one cookie on top of each sphere, dust with pepper, and serve immediately.
