Quince Jam

Ingredients
- 2 kg quince
- 1 lemon (juiced)
- 1 kg gelatin sugar (1:1)

Rub the quinces with a cloth and wash them. Remove the stem and blossom, then cut into cubes with skin and core intact.

Place in a pot and cover with 1½ liters of water. Add lemon juice and bring to a boil; simmer uncovered for about 45 minutes until soft.

Lay a cloth over a large sieve placed above a bowl or pot, pour the quince pieces with liquid through it, letting it drain. Squeeze out remaining juice from the fruit pieces using the cloth.

Allow the quince juice to cool completely.

Measure 1 liter of juice, mix with gelatin sugar and bring to a boil in a large pot over high heat while stirring constantly; simmer for 4 minutes, bubbling, stirring frequently.

Remove the pot from the heat. Fill hot-washed jars to the brim and seal immediately with screw caps. Place on the cap for 10 minutes, flip, and let cool.
