Ingredients

  • 1 medium onion
  • 4 tbsp butter
  • 2 tbsp flour
  • 600 ml Vegetable Broth
  • 200 g peanut butter
  • 200 ml heavy cream (at least 30% fat)
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp Lemon Juice
  • 300 g cooked rice
  • 2 tbsp peeled, chopped peanuts
  • 1 tsp freshly chopped parsley

Instructions

    Peel and dice the onion; sauté in a pot with melted butter until translucent.

    Add flour, stir briefly, then gradually whisk in vegetable broth while stirring constantly. Add peanut butter and simmer on low heat for about 10 minutes. Stir in heavy cream and heated rice. Season with salt, pepper, and lemon juice. Sprinkle chopped peanuts and parsley before serving.
