Peanut Cream Soup with Celery Stalks

Ingredients

  • 1 stalk Celery
  • 1 medium onion
  • 4 tbsp butter
  • 1.5 tbsp flour
  • 750 ml chicken broth (ready-made)
  • 125 g peanut butter
  • Salt
  • ground pepper
  • 1 tbsp Lemon Juice
  • 2 tbsp roasted peanuts (unsalted, coarsely chopped)

Instructions

    Wash the celery. Peel the onion. Dice the celery and onion into small cubes.

    Melt the butter in a wide pot. Sauté the diced celery and onion over medium heat while stirring.

    Sprinkle the flour over them, stir briefly, then gradually whisk in the broth. Add the peanut butter and continue stirring over low heat for about 10 minutes. Season the soup with salt, pepper, and lemon juice, and sprinkle chopped peanuts on top before serving.
