Peanut Cookies

Spoonsparrow Peanut Cookies: Super tasty thanks to vanilla, cinnamon, nutmeg, and orange zest – you have to try them!
Ingredients
- 120 g butter
- 125 g raw cane sugar
- 1 pinch salt
- 1 egg
- 150 g Spelt flour Type 1050
- 1 tsp Baking powder
- 0.5 tsp vanilla powder
- 0.5 tsp ground cinnamon
- 0.5 tsp organic orange zest
- 0.25 tsp nutmeg
- 140 g unsalted peanut kernels
- 80 g hearty rolled oats

Beat butter, sugar and salt until fluffy, then fold in the egg. Mix flour with baking powder, vanilla, cinnamon, orange zest and nutmeg, and stir into the wet mixture. Roughly chop peanuts and combine 100 g chopped peanuts with oats carefully.

Line a baking sheet with parchment paper. Drop spoonfuls of dough onto the sheet, forming balls spaced apart. Finely chop remaining peanuts to sprinkle on top and press lightly. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 13–15 minutes.

Remove cookies from the baking sheet and let them cool.
