Ingredients
- 4 chicken breast fillets (about 600 g)
- Salt
- 1 egg
- 1 red chili pepper (finely diced)
- 1 tbsp finely chopped coriander
- 1 tbsp chili sauce (jar)
- 3 tbsp breadcrumbs
- vegetable oil (for frying)
- 3 tbsp butter
- 3 tsp sugar
- 5 tbsp Soy sauce
- 1 tbsp oyster sauce
- Salt
- pepper (ground)
- 4 stalks lemongrass

Grind the meat with a little salt and the egg in an electric food processor, then mix in the chili pepper, coriander, and sauce. Knead in the breadcrumbs until a well-formed dough forms. Shape 8‑12 oval meatballs (smaller or larger as desired) and insert one half of a lemongrass stalk into each. Fry in hot oil for about 8 minutes until golden brown.

For the sauce, heat the butter, add the sugar and let it caramelize, then deglaze with soy sauce, a splash of water, and oyster sauce. Simmer for 1‑2 minutes, season with salt and pepper, ladle into small bowls, and serve alongside the skewers.
