Peach Shake

A refreshing peach shake with ginger, lemongrass and honey that clears your mind in the morning thanks to the invigorating effects of ginger and lemongrass.
Ingredients
- 2 stalks lemongrass
- 30 g ginger (1 piece)
- 0.5 lemon
- 1 tbsp liquid honey
- 2 peaches
- 150 g Yogurt (0.3% fat)
- 250 ml plant drink (soy‑rice milk)
Instructions

Trim the root end and tough outer parts of the lemongrass, then finely chop the tender inner stalk.

Peel and grate the ginger, then squeeze the lemon juice.

Combine ginger, 1 tbsp lemon juice, honey and chopped lemongrass in a saucepan; bring to a boil and simmer for 1 minute. Let cool completely (can be prepared the night before).

Wash, halve and pit the peaches, then cut the flesh into pieces.

Blend the peach pieces with the flavored honey mixture, yogurt and soy‑rice milk until smooth. Pour into glasses.
