Orange Bulgur

Orange bulgur with fruit salad: The fruity-aromatic, quick grain delight is rich in fiber, vitamins and magnesium.

Ingredients

  • 100 g bulgur
  • 300 g large organic orange (1 large organic orange)
  • 0.5 tsp rapeseed oil
  • 125 g small apples (1 small apple)
  • 125 g small pears (1 small pear)
  • 100 g grapes
  • 1 fresh fig
  • 125 g small bananas (1 small banana)
  • 0.5 lime
  • 2 tsp maple syrup

Instructions

    Place bulgur in a bowl. Cover with 100 ml boiling water and let it soak for about 5 minutes.

    Meanwhile, wash the orange, dry rub it, and finely grate the zest. Halve the orange, squeeze out the juice and measure 120 ml of juice. Mix the juice, zest and rapeseed oil into the soaked bulgur using a fork.

    Wash, dry, quarter and pit the apple and pear. Halve and optionally pit the grapes, peel the banana. Cut all fruits into bite‑sized pieces.

    Squeeze half a lime and whisk its juice with maple syrup in a small bowl. Pour over the fruit, mix everything together and let it sit for 8–10 minutes. Serve on top of the orange bulgur.
