Peach Preserves

Ingredients

  • 1.2 kg ripe peaches (if available red wine grapes peaches)
  • 500 g gelatine sugar
  • 1 untreated lemon
  • 1 glass white wine

Instructions

    Score peaches crosswise, pour hot water over them, let sit for 1 minute, cool and peel. Cut flesh from the pit and quarter it; puree the rest. Add gelatin sugar to a pot. Thinly peel lemon zest, juice half.

    Add wine, 1 tbsp lemon juice and 4 pieces of lemon zest to the pot, stir, bring to a boil once, then simmer for 3 minutes. Remove from heat, pour hot fruit purée into jars with one piece of zest while still hot, seal immediately.
