Peach Preserve

Ingredients

  • 1 kg peaches
  • 1 untreated orange
  • 500 g gelling sugar (2:1)
  • 1 cinnamon stick
  • 20 ml orange liqueur (optional)

Instructions

    Parboil the peaches in boiling water, shock with cold water and peel. Halve, pit, and cut flesh into ~2 cm pieces. Wash the orange hot and slice a thin strip of zest (without white pith). Squeeze the juice. Mix orange juice, zest, sugar, and peach pieces in a large pot. Add cinnamon stick and let steep closed for at least 1 hour.

    Then bring to a rolling boil while stirring constantly and cook about 4 minutes. Perform a gel test and remove cinnamon and zest. Optionally flavor with orange liqueur. Pour hot into clean jars, seal immediately and stand upside down for ~10 minutes. Then turn upright and cool.
