Ingredients

  • 750 g lingonberries
  • 500 g preserve sugar (2:1)
  • 1 lemon (juice)
  • 1 Vanilla bean
  • 5 kiwis

Instructions

    Rinse the berries and only wash if absolutely necessary to avoid juice loss and water absorption. Mix the fruit with lemon juice, split vanilla bean, and preserve sugar; lightly mash with a potato masher and let sit for about 30 minutes.

    Meanwhile peel the kiwis and slice them thinly. Add them to the berries and stir while bringing to a boil.

    Cook for about 4 minutes, bubbling continuously while stirring. Perform a gel test, remove from heat, and fish out the vanilla bean. Fill hot, rinsed jars to the brim and seal immediately with a screw cap. Let cool.
