Peach Berry Jam

Ingredients

  • 500 g peaches
  • 600 g sugar
  • 1 lemon (juice)
  • 500 g mixed currants (red and white)

Instructions

    Parboil the peaches, shock them, peel, halve, remove pits and dice the flesh. Combine with half the sugar and lemon juice in a pot and let steep for 1 hour.

    Then bring to a boil while stirring occasionally and simmer for about 15 minutes until the fruit breaks down. Meanwhile wash and rinse the currants.

    Add the remaining sugar to the peaches and simmer for another ~15 minutes.

    Perform a gelling test, pour the jam into prepared jars, seal well and let cool.
