Ingredients

  • 1 kg black currants
  • 1 kg pectin sugar

Instructions

    Wash, rinse, and mix the currants with the pectin sugar in a large pot. Let the mixture steep for 1–2 hours.

    Rinse the screw-top jars in hot water and let them drain on a dish towel.

    Bring the mixture to a boil while stirring occasionally.

    Cook the fruit according to the instructions on the pectin sugar until it reaches the gelling point.

    Puree the currants with an immersion blender, then strain through a fine sieve into another pot. Bring the mixture back to a boil.

    Turn the screw-top jars over, and using a metal measuring cup or ladle and a pouring ring, pour the very hot jam into the jars, wipe the rims clean, seal immediately, and place on the clamp (to create vacuum). Repeat until all jam is filled. After about 5 minutes, the jars can be turned back over.
