Ingredients

  • 1 kg currants
  • 500 g gelatine sugar (2:1)
  • 3 tbsp cassis (fruit liqueur)
  • 1 organic lime (juice and grated zest)

Instructions

    Mash half of the peeled, washed, and dried fruits with a fork. Add cassis, gelatine sugar, the zest, and juice of the freshly washed lime, then mix with the whole fruits. Let it steep for about 30 minutes. Bring to a boil while stirring constantly for 6-8 minutes, then remove the pot from the heat.

    Fill almost full hot-washed jars with the jam and seal them. Place the jars upside down for 5 minutes, then turn them over and let cool completely.
