Ingredients

  • 400 g mixed fish fillet (tuna, sea bream, redfish)
  • 6 slices smoked fish (merlin)
  • 2 limes
  • 2 Avocados
  • 0.5 red bell pepper
  • 2 cornichons
  • 2 shallots
  • 2 Garlic cloves
  • 1 tsp Capers
  • 0.5 leaf lettuce
  • 0.5 Frisée salad
  • 200 g black olives
  • 4 tbsp olive oil
  • Basil
  • salt (pepper)

Instructions

    Peel avocados, remove pits. Squeeze one lime. Puree avocados and mix with lime juice. Peel and squeeze one shallot and one garlic clove, combine, chill. Halve olives, pit them, finely puree with olive oil, chill. Wash fish fillets, pat dry, finely chop. Finely chop capers and cornichons, peel and finely chop remaining garlic clove and shallot. Tear zest from a lime, squeeze it out. Mix half the zest with remaining ingredients, season with salt and pepper. Slice smoked fish into thin strips. Spread fish tartare in the center, roll fish fillets around it. Wash salad, tear into small pieces, garnish the center of plates. Use a tablespoon to scoop avocado-olive puree, place on plate edge and insert fish rolls between. Dice bell pepper, remove seeds, finely dice, sprinkle over salad.
