Ingredients

  • 250 g spiral pasta
  • Salt
  • 100 g Arugula
  • 100 g Sugar snap peas
  • 3 tbsp white wine vinegar
  • 1 tsp dandelion oil
  • Pepper (freshly ground)
  • 1 pinch sugar
  • 1 tsp medium-hot mustard
  • 1 tsp mayonnaise
  • 250 g smoked salmon (sliced)
  • 4 tbsp grated Parmesan

    Cook the pasta in plenty of boiling salted water until al dente, then drain, rinse with cold water and let it dry. Rinse the arugula, wash it and pat it dry. Wash the sugar snap peas, trim them and blanch in boiling salted water for 1 minute, then drain, rinse and let them dry. Whisk together vinegar, oil, mustard, salt, pepper, sugar, mustard and mayonnaise to make a dressing. Toss the pasta with arugula and sugar snap peas, divide onto plates. Slice the salmon into wide strips, arrange on top, drizzle salad with dressing. Sprinkle with parmesan and serve.
