Peach Almond Cake

Ingredients

  • 750 g peaches
  • 0.5 lemon (juice)
  • 50 g Brown sugar
  • 250 g flour
  • 250 g ground almonds
  • 250 g sugar
  • 375 g butter
  • 1 tsp cinnamon powder
  • 0.5 tsp Salt
  • 40 g almond slivers (unshelled)

Instructions

    Parboil the peaches, cool, peel, halve, remove pits and dice the flesh. Mix with lemon juice and brown sugar.

    Process the flour with almonds, sugar, pieces of butter, cinnamon and salt in a mixing bowl using dough hooks until crumbly.

    Preheat oven to 180°C (convection). Line a baking sheet with parchment paper.

    Sprinkle about two‑thirds of the crumbs onto the sheet and press flat. Arrange the peaches on top and cover with remaining crumbs. Bake for about 40 minutes until golden brown.

    Remove from oven, cool, sprinkle almond slivers on top and serve cut into pieces.
