Ingredients

  • 150 g quark
  • 100 g flour
  • 2 tbsp sugar
  • 4 eggs
  • 100 ml milk
  • 200 g red gooseberries
  • 2 tbsp butter
  • powdered sugar (for dusting)

Instructions

    Whisk the quark with flour, sugar, eggs and milk into a batter and let it rest.

    Wash the berries, pluck them from stems, rinse, pat dry and fold them into the batter.

    Heat butter in a large pan, pour in the batter and cook until the bottom is browned. Flip, continue cooking on low heat for a few minutes, then break into pieces with a fork. Transfer the pancake to an oven‑proof dish and bake at 200 °C (mid‑rack) for about 3 minutes.

    Serve dusted with powdered sugar.
