Ingredients

  • 2 untreated lemons
  • 1 Tbsp vanilla sugar
  • 3 tbsp sugar
  • 250 g red currants
  • 200 ml whipping cream
  • 200 g quark
  • 16 ladyfingers

Instructions

    Wash the lemons hot, pat dry and grate the zest. Mix half of it with the vanilla sugar and set aside for garnish.

    Squeeze the juice of one lemon and combine with the remaining zest and 2 tbsp sugar in a bowl. Rinse the currants, pat dry and remove stems. Mix into the lemon mixture, gently press with a fork and let sit for about 15 minutes.

    Beat the cream stiff. Whisk the quark with the remaining sugar until smooth and fold in the whipped cream.

    Crush the ladyfingers in a food processor and fill half of them into four glasses. Cover with half of the currants and a splash of juice, layer with the cream, and repeat all ingredients in layers. Finish with cream and sprinkle with lemon sugar. Chill for at least 30 minutes before serving.
