Pea Tarts

Ingredients
- 80 g Butter
- 150 g yufka dough
- 100 g carrots
- Salt
- 100 g peas (frozen)
- 2 tbsp yogurt
- 2 tbsp crème fraîche
- Cayenne pepper
- 2 tbsp chives rings
- black pepper (ground)

Preheat the oven to 200°C (400°F) with fan and top/bottom heat. Melt the butter and spoon it into four depressions of a muffin tin. Cut the dough into about 12 equal pieces. Thinly brush each piece with butter, place three layers in the cups, and press firmly. Bake the pastry shells for 10-15 minutes until golden brown. Let them cool.

Peel the carrots and dice them into ~1 cm cubes. Boil in lightly salted water for about 3 minutes, add the peas and cook for another 1–2 minutes. Drain, shock with cold water, and let drain. Mix the chilled vegetables with yogurt and crème fraîche. Season with salt and cayenne pepper.

Spread the mixture onto the pastry shells, sprinkle with chives, and season with black pepper before serving.
