Pea Soup with Chorizo

Erbsensuppe mit Chorizo by Spoonsparrow: We give the hearty soup classic a Spanish touch!

Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 150 g starchy potatoes
  • 2 stalks celery
  • 2 tbsp butter
  • 200 g peas
  • 800 ml vegetable broth
  • Salt
  • Pepper
  • chili flakes
  • 80 g chorizo
  • spring onions (for garnish)

Instructions

    Peel and finely chop the shallot and garlic. Peel or trim the potatoes and celery, wash them, and dice. Sauté everything together in 1 tbsp hot butter until translucent.

    Add the peas and deglaze with broth. Simmer gently for about 20 minutes. Then puree finely and strain through a sieve if desired. If needed, reduce further or add more broth.

    Season with salt, pepper, and chili. Divide into glasses or bowls. Slice the chorizo very thinly, place on top of the soup, and garnish with spring onion stalks. Serve the pea soup with chorizo.
