Low‑Carb Pea Soup from Spoonsparrow: Green peas turn into a wonderfully creamy soup in no time!

Ingredients

  • 400 g Frozen peas
  • 1 Shallot
  • 1 Garlic clove
  • 600 ml Poultry broth
  • Pepper (freshly ground)
  • Salt
  • 1 tbsp butter
  • 1 tsp fresh grated ginger
  • 100 g heavy cream
  • fresh herbs (e.g., marjoram)

Instructions

    Peel and finely chop the shallot and garlic. Sauté in hot butter, then add peas and ginger. Deglaze with poultry broth and bring to a boil.

    Simmer for about 8 minutes, then stir in the cream and puree the soup until smooth. Optionally strain through a sieve. Season with salt and pepper, ladle into bowls, garnish with fresh herbs, and serve.
