Pea Protein Bites

The pea protein bites from Spoonsparrow taste wonderfully juicy and provide valuable vital nutrients.

Ingredients

  • 370 g frozen peas
  • 225 g rolled oats
  • 75 g hulled hemp seeds
  • 1.5 tsp fennel seeds
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 2 tsp Baking powder
  • 2 tsp herb salt
  • 3 large eggs
  • 2 carrots
  • 250 g quark (20% fat in the tub)
  • Salt
  • Pepper
  • 0.5 bunch scallions (10 g)

Instructions

    Let peas thaw. Pulse oats and hemp seeds into flour. Grind fennel, coriander, and cumin finely in a mortar and add to the flour mixture. Add baking powder and herb salt and stir.

    Add peas and eggs to the mixer and blend until a smooth dough forms. Line a loaf pan with parchment paper and pour the dough in.

    Peel carrots, cut lengthwise into quarters, and lay them on top of the dough. Bake in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) for 55–60 minutes. Then cool for about 30 minutes.

    Meanwhile mix quark with salt, pepper, and 2 tbsp water. Wash scallions, pat dry, and slice into rings. Slice bread, spread the quark mixture on each slice, and garnish with scallion rings.
