Pea Omelette

Ingredients

  • 250 g Peas (frozen)
  • 3 shallots
  • 6 Eggs
  • 200 ml milk
  • 30 g semolina
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 4 tbsp olive oil

Instructions

    Bring the milk to a boil in a pot, stir in the semolina and bring to a second boil, then set aside to thicken. Meanwhile blanch the peas in boiling salted water for 2-4 minutes, drain and let them cool.

    Peel the shallots and slice into thin rings. Heat 1 tsp olive oil in a large non‑stick pan, sauté the shallots until translucent.

    Separate the eggs; beat the yolks with the semolina mixture, whisk the whites until stiff peaks form, fold in, season with salt, pepper and nutmeg, then stir in the cooled peas and shallots.

    Heat 1 tbsp olive oil in a non‑stick, preferably square pan. Pour one third of the batter into the pan. Cover and cook over low heat for about 7–10 minutes until set, flip and cook another 2–3 minutes on the other side. Repeat with the remaining batter.

    Cut the finished omelettes into squares, keep warm in a 80 °C oven, then plate and serve.
