Pea Cream on Toasted Bread

Ingredients
- 150 g thick green beans (pitted)
- Salt
- 150 g peas
- 1 Garlic clove
- 2 tbsp olive oil
- 2 tbsp lemon juice
- pepper (ground)
- 3 radishes
- 1 handful Arugula
- 8 slices baguette
- 4 tbsp finely grated parmesan

Blanch the beans in boiling salted water for about 8 minutes, lift with a slotted spoon, shock in cold water, drain and cool. Remove skins. Blanch peas in the same water for about 5 minutes, drain, shock, and let drain.

Preheat the oven on the grill setting.

Mix beans and peas and finely mash with a fork or pulse slightly with an immersion blender. Peel garlic and press into mixture. Stir in olive oil and lemon juice, season with salt and pepper.

Wash, trim, and slice radishes thinly. Wash arugula, rinse, and dry thoroughly.

Toast baguette slices in the hot oven for about 5 minutes, turning halfway through. Spread pea-bean puree on each slice, top with some radish slices and a few arugula leaves. Sprinkle parmesan and serve.
