Ingredients

  • 8 garlic cloves
  • 8 thin chilies
  • 4 sprigs thyme
  • 4 stems basil
  • 400 g green olives (pitted)
  • 800 ml extra‑virgin olive oil

Instructions

    Peel and halve the garlic cloves. Wash the chilies. Rinse the thyme, pat dry, and break into pieces. Wash the basil, pat dry, and finely chop the leaves.

    Distribute the garlic, basil, chilies, thyme sprigs, and olives in clean, boiled bottles and pour over with the oil. The oil will keep for about 6 weeks.
