Ingredients

  • 500 g short macaroni
  • Salt
  • 1 Zucchini
  • 1 young Swiss chard
  • 400 ml white beans (1 can)
  • 0.5 untreated lemon
  • 3 tbsp olive oil
  • 200 ml vegetable broth
  • Salt
  • Pepper (freshly ground)

Instructions

    Cook the pasta according to package instructions in plenty of boiling salted water. Drain and set aside. Meanwhile, wash, trim and slice the zucchini into thin rounds. Wash, trim and finely chop the Swiss chard. Rinse the beans in a sieve.

    Wash the lemon, zest it with a zester and squeeze out the juice. Heat olive oil in a pan, sauté the zucchini and chard while stirring. Deglaze with lemon juice and broth. Add the beans, season with salt and pepper, and simmer for 4–5 minutes.

    Add the drained pasta to the pan and toss with the sauce. Plate and sprinkle with lemon zest on top.
