Pasta with Vegetables and Salmon Cubes

Ingredients
- 300 g Penne
- 300 g salmon fillet
- 2 tbsp lemon juice
- 3 tbsp water
- 0.125 l heavy cream
- Salt
- pepper (from grinder)
- 100 g Sugar snap peas
- 2 carrots
- 10 Asparagus spears
- 3 tbsp sunflower oil
Instructions

Wash, trim, cut ends off the sugar snap peas, halve them lengthwise and crosswise, blanch in boiling salted water for 3 minutes, drain, rinse with cold water, then let dry.

Peel the carrots and slice thinly, blanch in boiling salted water for about 6 minutes, drain, rinse with cold water, then let dry.

Wash the asparagus, peel the lower third, cut off ends, slice diagonally into pieces, blanch in boiling salted water for about 8 minutes.

Cut the salmon into bite‑sized cubes. Heat oil, add sugar snap peas, carrots and asparagus, sauté for about 2 minutes over medium heat. Deglaze with lemon juice and water. Add cream and salmon, simmer together for another 3–4 minutes until the salmon is cooked. Season with salt and pepper.

Cook the pasta according to package instructions, drain, then stir into the sauce, mix well and serve.
