Pasta with Salmon

- 1 tbsp butter
- 1 tsp sugar
- 500 g Green Asparagus
- 200 ml whipping cream
- Salt
- Pepper (freshly ground)
- 300 g Tagliatelle
- 300 g fresh salmon fillet
- 2 tbsp chopped chervil leaves

Wash and trim the asparagus, cut off ends, and cook in boiling salted water with butter and sugar for about 10 minutes. Drain, remove tips, and keep warm. Cut five spears into small pieces and blend with two tablespoons of asparagus stock to make a puree. Add this mixture and cream to a pan and reduce until slightly thickened; season with salt and pepper.

Cook the tagliatelle in plenty of boiling salted water until al dente. Dice the salmon into bite-sized pieces. Lightly butter a steamer basket, place the fish pieces inside, fill a pot about 2 cm high with water, and set the basket on top. Steam the salmon for about 5–6 minutes over simmering water. Toss the pasta with the salmon and sauce, garnish with asparagus tips, and sprinkle chervil before serving.
