Ingredients
- 150 g pancetta
- 1 onion
- 1 Garlic clove
- 1 tbsp Olive Oil
- 2 Tomatoes
- 300 g canned tomatoes
- 400 g pappardelle
- Salt
- Pepper (freshly ground)
- a pinch of sugar
- 2 dried red chili peppers
- 50 g Pecorino cheese

Slice the pancetta into strips. Peel and finely dice the onion and garlic. Sauté everything in a pan with olive oil. Wash the tomatoes, cut them into cubes, add to the pan and cook briefly. Deglaze with canned tomatoes and let simmer slightly.

Cook the pasta according to package instructions in plenty of boiling salted water until al dente. Season the tomato sauce with salt, pepper, sugar, and add the chili peppers. Drain the pasta and toss it with the sauce. Plate and sprinkle grated pecorino on top before serving.
