Pasta with Vegetables

Ingredients

  • 400 g spiral pasta (e.g., rotini)
  • Salt
  • 2 bell peppers (red and yellow)
  • 2 small zucchini
  • 1 ripe tomato
  • 1 Garlic clove
  • 2 tbsp olive oil
  • pepper (ground)
  • 75 g grated Parmesan cheese
  • 1 handful parsley

Instructions

    Cook the pasta in plenty of boiling salted water until al dente.

    Wash the bell peppers, halve them, remove seeds and cut into bite-sized pieces. Wash the zucchini, trim ends and dice it as well. Wash the tomato, cut off the stem end and dice it small. Peel the garlic, finely chop it and sauté it in a pan with olive oil until translucent. Add the pepper and zucchini cubes and cook for 2-3 minutes. Add the tomato, season everything with salt and pepper. Stir in the drained pasta (add 2-3 tbsp of pasta water if desired) and serve on plates. Garnish with grated parmesan and parsley.
