Pasta with Vegetables

Ingredients
- 200 g fusilli
- 1 Zucchini
- 1 onion
- 6 stalks asparagus
- 1 Avocado
- 4 tbsp Lemon juice
- 2 Tbsp olives
- 1 Tbsp parsley
- 4 tbsp olive oil
- Salt
- pepper (from grinder)
- parmesan
Instructions

Cook pasta in plenty of boiling salted water until al dente, drain and set aside.

Wash zucchini, trim, and slice thinly. Peel onion, halve lengthwise, cut into very thin strips. Wash asparagus, peel lower third, trim ends, cook in boiling salted water for about 10 minutes, drain, shock in cold water, then cut into pieces.

Halve avocado, remove pit, peel, cube the flesh, and immediately drizzle with 1 Tbsp lemon juice.

Whisk olive oil with remaining lemon juice and combine with pasta, zucchini, onion, asparagus, and avocado. Fold in olives and parsley, season with salt and pepper. Serve in bowls and grate some parmesan on top.
