Ingredients
- 20 g Parsley (1 bunch)
- 250 g Cherry Tomatoes
- 1 Garlic clove
- 1 red chili pepper
- 1 lemon
- 500 g whole wheat spaghetti
- Salt
- 2 tbsp olive oil
- 1 tsp coconut blossom sugar
- 100 g Feta

Wash the parsley, shake dry, pluck leaves and roughly chop. Wash the tomatoes and cut in halves if desired. Peel the garlic. Wash, trim, deseed and finely chop the chili pepper. Squeeze the lemon.

Cook the pasta in boiling salted water according to package instructions until al dente. Heat oil in a large pan. Press the garlic into the pan and add chili and tomatoes. Cook for 2–3 minutes over medium heat. Sprinkle with coconut blossom sugar. Drain the pasta, pour it into the flavored oil and drizzle with lemon juice. Toss through and season with salt.

Serve the pasta on four plates, sprinkle with parsley and crumble feta on top immediately.
