Spaghetti with Tomato Sauce and Carrots

Ingredients

  • 500 g spaghetti
  • 4 tomatoes
  • 3 Carrots
  • 1 Shallot
  • 1 Garlic clove
  • 5 tbsp olive oil
  • 4 tbsp parmesan (freshly grated)
  • parsley (for garnish)
  • Salt
  • freshly ground pepper

Instructions

    Cook spaghetti according to package instructions in salted water until al dente.

    Wash tomatoes, quarter them, remove stems and dice.

  3. 3.

    Peel carrots and cut into about 8 cm long sticks or shave thinly.

    Peel shallot and garlic clove and finely dice both.

  5. 5.

    Blanch carrot sticks in salted water for about 1 minute. Shock in cold water and drain. Sauté in 3 tbsp oil and add the slightly wet spaghetti, seasoning with salt and pepper.

    Sauté diced shallot and garlic in remaining oil, add tomatoes and season again with salt and pepper.

    Plate spaghetti with carrots, top with tomatoes, sprinkle Parmesan and garnish with parsley before serving.
